Winnow Vision AI food-waste tracking in the Regent Taipei buffet
Regent Taipei cut per-capita buffet food waste by 60% with Winnow's AI food-waste system
Problem
The Regent Taipei buffet restaurant, 栢麗廳, accounts for about 30% of the hotel's food and beverage revenue and 23% of its food waste. The hotel had looked for ways to cut food waste since 2018.
Approach
The hotel adopted the UK firm Winnow's AI food-waste recognition system, and the machine was imported at the end of 2023. Winnow had no Taiwan office, so hotel staff handled installation and upkeep with remote guidance. Training the AI on more than 300 dishes took about one month. The hotel and Winnow review results online every two to three weeks.
Results
Takeaway
The hotel reports lower waste and lower ingredient costs from one measured restaurant. Setting up a foreign vendor's device without a local agent fell to the hotel's own staff.
